With vistas that stretch from the Lennox Head National Surfing Reserve all the way to Cape Byron Lighthouse, Pat Morton Lookout is the perfect spot to sit back and watch the world go by - and look for humpback whales passing by on their annual migration between May and November.
Of course, no trip to Lennox Head is complete without taking a refreshing dip at Lake Ainsworth. Passing rolling green hills and picturesque farmland, the drive to Zentvelds Coffee Plantation follows the Coast Road north before heading towards the town of Newrybar. Family-owned and -run, with the beans grown, processed and roasted on site, Zentvelds offers a true 'crop-to-cup' experience. Sip on a barista-made coffee while overlooking the plantation or pick up some freshly-ground beans to take home with you.
Arriving in Newrybar, a quaint village with plenty of character, have a late lunch at Harvest. The award-winning venue wears many hats - home to a restaurant, artisan deli and Australia's oldest bakery - all nestled within pretty gardens. Afterwards, head to the main street to shop for local artisan goods and homewares.
The next stop along your hinterland drive is the Duck Creek Macadamias farmgate stall. Enjoy the fresh native nuts directly from the source or indulge in something sweeter with the range of chocolate-coated treats on offer.
En route back to Ballina, make tracks for the mesmerising Killen Falls. Nestled among some of the last surviving remnants of the big scrub rainforest that once extended across the Upper Northern Rivers Region - and featuring an open cave at the base - these incredible cascades need to be seen to be believed.
Wind down after a busy day with a sunset cruise along Richmond River with Out of the Blue Adventures. A marine biologist is on board to talk guests through the river's rich history and biodiversity. Keep your eyes peeled for rare birds and pods of dolphins.
